Edamame Hummus

Hello again! Today I am sharing a delicious and super easy dip that is sure to please. If you have ever had the very popular chickpea hummus, this variation is not much different. The flavors are pretty comparable but I find exchanging the edamame for the chickpeas is a great way to shake things up a bit. If you like hummus and you like edamame, this recipe is for you! If you have never had either, I highly suggest giving it a try and I bet you won’t be disappointed.

WHY you should give it a try:

Edamame

  • Edamame refers to a soybean that has been harvested at a time where they are edible yet still immature and green.
  • Great source of folate which is great for prenatal health in preventing many birth defects and in adults it helps lower the risk of cardiovascular disease.
  • The polyunsaturated fats in soybean oil include heart-healthy omega-3 fatty acids that reduce inflammation and lower the risk of cardiovascular disease.

WHERE to get the goods:

  • This is a very simple recipe so many of the items may already be in your home but the edamame can be found in the freezer isle at your local grocery store.
  • The tahini is usually hiding in the peanut butter isle.

  • It is also great on sandwiches, burgers, and pita.

Ingredients
  1. 3 1/4 cups water
  2. 1 1/2 tsp salt
  3. 1 cup frozen edamame, shelled
  4. 1/4 cup EVOO
  5. 3 tbsp tahini
  6. 2 cloves garlic
  7. 1/2 tsp cumin
  8. 1/8 tsp paprika
Instructions
  1. In saucepan place 3 cups of water and 1 tsp of the salt and bring to a boil.
  2. Add the edamame and allow the water to come back to a boil. Once boiling cook uncovered for 5 min.
  3. Drain the edamame and place in a high speed blender or food processor with the remaining ingredients.
  4. Blend until smooth, chill and serve.
  5. Enjoy!
