Loaded GuacamoleGuacamole lovers, this one is for you. I created this recipe out of the desire to “level-up” the regular old, run of the mill guac. I added all of the essential guacamole ingredients and added a few things to help spice it up- literally. 

 

WHY you should give it a try:

Avocados-

  • Did you know that an avocado is actually a fruit because it comes from a tree?
  • Avocado contains more potassium than bananas, 4% more per serving. Potassium is great for reducing high blood pressure, a major risk factor in heart attacks and strokes.
  • These days we are hearing more and more about healthy fats and the fact that fat is actually good for you, when gathered from the correct sources. Avocados are one of those sources being very high in monounsaturated fatty acids which are great for heart health among other things.
  • Numerous studies have shown that eating avocado can improve heart disease risk factors like Total, LDL and HDL cholesterol, as well as blood triglycerides.

WHERE to get the goods:

  • All of these ingredients are available at your local grocery store year round making this a great, healthy snack anytime of the year.

HOW to enjoy it:

  • Grab some chips and dig in!
  • Top tacos, salads, burgers.. the options are endless with this versatile dip.

For the guacamole
  1. 3 avocados, halved, pitted and mashed
  2. 2/3 cup red onion, diced
  3. 1 lime, juiced
  4. 1 tsp cumin
  5. 1/2 tsp salt
  6. 2 tbsp pickled jalapeno, diced
For the topping
  1. 1/2 cup greek yogurt
  2. 1 tsp sriracha
  3. 2 tbsp pickled jalapeno, diced
  4. 6 cherry tomatoes, diced
  5. 1/4 cup red onion, diced
  6. 1/4 cup queso fresco
Instructions
  1. In a medium bowl, mix together all guacamole ingredients until well incorporated.
  2. Transfer into serving bowl.
  3. Mix Greek yogurt and sriracha together and carefully spread evenly over guacamole.
  4. Sprinkle remaining toppings and refrigerate until cold or serve immediately.
