WHY you should give it a try:
Sweet Potatoes
- Sweet potatoes contain an extremely high amount of vitamin A, beta-carotene which is a great antioxidant and also helps with reducing inflammation.
- They are also rich in vitamin B and C, both of which are excellent immune system boosters that can defend your body from a wide variety of conditions and afflictions.
- The high amount of soluble fiber and protein keeps digestion moving at a steady rate which keeps the colon healthy, keeps you fuller for longer and regulates blood sugar to prevent spikes and crashes and has been proven to lower cholesterol.
Chicken
- Chicken is an incredibly common food being consumed today but I wanted to include the health benefits of it as a refresher course since it is such a large part of this recipe
- Chicken is very high in lean protein which is essential for muscle growth and development, and helps support a healthy body weight and aids in weight loss.
- It is a natural mood enhancer because it contains the amino acid, tryptophan. Whenever you’re feeling down, it can increase the serotonin levels in your brain which will enhance your mood.
- This form of poultry is also high in selenium which is involved in thyroid, hormone, metabolism, and immune function.
WHERE to get the goods:
- Though any chicken will work for this recipe, I recommend purchasing organic chicken from a local farmer or at least from a company that uses healthy farming practices.
- Sweet potatoes can be found at any market. They are in season in the late summer and fall which makes this a great recipe to try when the seasons are changing. (Makes a great game day meal!)

- Both the filling of this dish and the sweet potatoes can be made in advance making this a great recipe that can make during food prep day and reheated later for a quick meal that tastes anything but quick!
BBQ Stuffed Sweet Potatoes

Ingredients
- 4 medium sweet potatoes, cleaned
- 2 chicken breasts, cooked and shredded
- 2 cloves garlic, mined or pressed
- 2 tbsp grapeseed oil
- 1 red pepper, chopped
- 1 medium red onion, diced
- 1/3 cup BBQ sauce (plus extra for topping)
- 1/4 cup green onion, diced for garnish (optional)
- 3 tbsp goat cheese crumbles, for garnish (optional)*
Instructions
- Preheat oven to 400 degrees. Poke sweet potatoes all over with a fork, place on a backing sheet and bake for 45 min or until tender.
- While potatoes are cooking, heat oil over medium heat in a medium skillet. Add in garlic and onion and cook for 5 minutes.
- Add in pepper and cook for 5 more minutes.
- Turn heat to low and add chicken and BBQ sauce and mix well.
- Remove potatoes from the oven and allow to cool for 5 minutes. When they are cool enough to touch, slice each sweet potato down the middle and scoop out just a little bit to create a well where you will put your filling.
- Stuff each potato with bbq chicken filling, top with green onions and a little drizzle of BBQ sauce and serve immediately.
