Raise your hand if you love BBQ but have never made pulled pork at home… you’re not alone! Just a few short weeks ago I would have been in the crowd with my hand in the air but that has now changed. I have since become a pulled pork master (OK maybe not MASTER persay but I’m getting pretty darn good with the stuff). I’m not sure why I never tried at it home; I guess it just seemed like a lot of work but I stand before you on the other side of my pulled pork attempts to tell you first hand that it is simple. While it may look like a lot of steps, they are easy peasy enough for even the novice chef to complete.

Cauliflower Rice: A Delicious Grain Substitute

Cauliflower RiceI typically don’t get too excited about food trends but this one is different. I’m honestly not sure how long this “trend” has been around but it’s semi-new to me and I’m in love. Lately, cauliflower rice has been served with just about every other dinner at house and I have received zero complaints, even the kids love it. 

My favorite part about this vegetable-turned-grain-substitute is it’s versatility. Since it’s being treated as a rice, it can be used just the same but in more ways because it’s a vegetable. Use it as the base of bowl, throw it into an egg scramble, top a salad with it… I could keep going.
 
Not only is is versatile but it’s a vegetable that can be treated like a grain. Grains are great, don’t get me wrong, but some of them come with a downside. Rice is a carb and lots of low carb eaters don’t get to enjoy it for that reason. BUT with cauliflower rice healthy eaters get all of the benefits of cauliflower with the meal choices of rice. Genius.

When it comes to a great burger there is one problem that I have come across over the past years.. the meat. As it has become overwhelming evident that the agriculture practices in our country are less than ideal, more americans like myself are becoming more skeptical about the sourcing of the meat we consume. Part of living the sustainable lifestyle I promote is finding good sources for all of our foods, especially beef. For my family I choose to purchase grass fed and local beef from small farms in my area but when that is not available or you simple don’t eat meat, these sweet potato and black bean burgers are a great alternative.READ MORE
