Simple Cole Slaw

Simple Cole SlawWhen I think of grilling, I think warm grilled foods and cold sides. I think, cole slaw. Cole slaw can come in many different variations, thus revealing one of its most desirable qualities. You can add apples or raisins, it can be have a creamy base or a vinegar base; the options are seemingly endless. However, in my opinion, nothing beats just a good ol’ fashioned cole slaw. Little bit of creamy, little bit of vinegar, little bit of sweet, cabbage and carrots. That’s it. At least thats all it takes to keep the mouths in my house happy.

WHY you should give it a try:

Purple and Green Cabbage

  • The extreme levels of antioxidants neutralize free radicals which makes this an important vegetable for cancer prevention.
  • Vitamin C is an important antioxidant and vital for our immune system. While vitamin A keeps eyesight healthy and prevents macular degeneration.
  • The high amount of soluble fiber and protein keeps digestion moving at a steady rate which keeps the colon healthy, keeps you fuller for longer and regulates blood sugar to prevent spikes and crashes and has been proven to lower cholesterol.

Carrots

  • Regular carrot consumption has been proven by researchers in Scotland to lower cholesterol.
  • Vitamin C, and beta-carotene protect cells from cancer-causing chemicals. They are also anti-inflammatory which is helpful in curing osteoarthritis, asthma and rheumatoid arthritis to name a few.
  • Being rich in vitamin A helps improve eyesight and prevent night blindness as we age.
  • The presence of carotenoids affect insulin resistance and lower blood sugar proven to helpful to people with diabetes.

WHERE to get the goods:

  • Carrots are a year round vegetable that can be found at your local farmer’s market grocery store. I recommend buying them in a bunch with the green attached for maximum freshness.
  • Cabbage is available 3 out of 4 seasons of the year and can also be found at your local farmer’s market grocery store.

HOW to enjoy it:

  • Cole slaw is a great side dish that accompany many meals
  • I also like to use it as a topping to salads with just a little oil and a few pieces of fresh fruit of choice.
  • Try it on your favorite kind of burger instead of using a bun.
  • Also great with other thinly sliced vegetables (peppers, onions, etc)

For the veggie mixture
  1. 4 cups green cabbage (about 1/2 head)
  2. 2 cups purple cabbage (about 1/2 head)
  3. 2 cups shredded carrots
For the dressing
  1. 1/4 cup mayonnaise, vegan, regular or greek yogurt
  2. 2 tbsp apple cider vinegar
  3. 2 tbsp red wine vinegar
  4. 2 tbsp dijon mustard
  5. 2 tbsp maple syrup
  6. 1 tbsp olive oil
  7. 1 tsp parsley flake
  8. 1 tsp garlic powder
  9. salt and pepper to taste
For the veggie mixture
  1. Using a mandolin slicer or food processor, shred green and purple cabbage to desired size. I like a mixture of sizes so ill typically do half thickly sliced and half thinner pieces.
  2. Place into large bowl and coat with dressing
For the dressing
  1. Simply whisk all ingredients together in medium bowl and pour over veggie mix.
