As summer comes to an end I am attempting to desperately cling to my favorite parts of this warm Grainless Summer Fruit Granola Barsseason. When it comes to food, I love the bounty that summer brings but what I look forward to most are fresh, ripe berries picked straight from the vine and consumed immediately. Though this recipe doesn’t use fresh berries, the presence of the dried berries are enough to bring summer back instantly with each and every bite. Easy Peasy Oven Roasted Pulled Pork

Raise your hand if you love BBQ but have never made pulled pork at home… you’re not alone! Just a few short weeks ago I would have been in the crowd with my hand in the air but that has now changed. I have since become a pulled pork master (OK maybe not MASTER persay but I’m getting pretty darn good with the stuff). I’m not sure why I never tried at it home; I guess it just seemed like a lot of work but I stand before you on the other side of my pulled pork attempts to tell you first hand that it is simple. While it may look like a lot of steps, they are easy peasy enough for even the novice chef to complete.

Marinated Tomato SaladLooking for something to do with all of those tomatoes from the garden? This recipe is just the thing!

Both my father and grandfather in-law have gardens that they have been cultivating year and year for as long as my husband can remember. Though the gardens have gotten smaller as the years have gone by, they are still both going strong. It’s wonderful to be able to benefit from home grown food without having the time or space to be able to do it myself (I’ll stick to my herb garden for now). But since they both have healthy gardens and a small family, we all get an abundant amount of tomatoes come harvest time. It’s wonderful but this year I found myself trying to figure out an easy, tasty way to consume these delicious red veggies so I decided to make a simple, easy salad that highlighted the nutrition and taste of home grown goodness. I am also a lover of vinegar so I had to be sure to add that in and the result was a great salad that we love!

Quick Easy Salsa

 

I love food. This should come as no surprise since I have a food website, I am a food photographer and I also do nutrition work. It should also not surprise anyone that I love to eat. Ever since I was younger, I have been a grazer. I was never the kid to sit down and clear my plate. Rather I would eat a little while my mother was cooking, eat a little more during the meal and then come back later to finish off whatever I had left; my parents used to call me a “bird”. I wish I could say that I grew out of that habit, but truth is, I haven’t. I still prefer to set out an appetizer while I cook, have a few bites while I enjoy a meal with the family and then come back for a snack after I’ve cleaned up the kitchen. This love of “munching” has driven me to create good snacking options for myself and my family.

Simple Cole SlawWhen I think of grilling, I think warm grilled foods and cold sides. I think, cole slaw. Cole slaw can come in many different variations, thus revealing one of its most desirable qualities. You can add apples or raisins, it can be have a creamy base or a vinegar base; the options are seemingly endless. However, in my opinion, nothing beats just a good ol’ fashioned cole slaw. Little bit of creamy, little bit of vinegar, little bit of sweet, cabbage and carrots. That’s it. At least thats all it takes to keep the mouths in my house happy.
